Zucchini Ricotta Roll-ups
These tasty treats look fancy but are so easy and fun to make. Heirloom tomatoes of various colors are especially attractive in this dish. I like to spear grape tomatoes horizontally and double-stack really small cherry tomatoes. Different kinds of pitted olives on top would be fun and delicious, too. Grab some toothpicks and have fun!

Ingredients
- 1 zucchini, small
- 12 leaves basil
- 1 tsp italian seasoning
- 12 grape tomatoes
- 1/4 cup marinara sauce
Ricotta Cheese
- .5 cups raw cashews, soaked overnight and drained
- .25 cup water, filtered
- .25 tsp salt
- .25 lemon, juiced
- .25 tbsp apple cider vinegar
- 1 tbsp nutritional yeast
- .5 tbsp parsley, chopped
Instructions
To make the ricotta
- Place the cashews, water, salt, lemon juice and vinegar in a high-speed blender and blend until smooth and creamy. Remove from blender and stir in the nutritional yeast, parsley and salt and pepper to taste.
To make the roll ups
- Slice the zucchini very thinly lengthwise, using a mandoline or a vegetable peeler. If the slices are too thick, they won’t roll up. I like to first cut a thin flat piece off each side, so I have a flat edge to settle securely on my cutting board and to get rid of most of the skin.
- Spread the slices out on a cutting board and top each with some basil. The basil doesn’t have to cover the entire zucchini slice.
- In a small bowl, fold the Italian seasoning into the ricotta. Thinly spread about 1 teaspoon of ricotta on each zucchini slice, going almost to the edges.
- Starting at a short end, roll up each zucchini slice. Spear a tomato with a toothpick and use the toothpick to secure the roll with the tomato resting on top. Dip in marinara sauce if you would like.
Notes
TIP: use store bought vegan ricotta instead of making your own
