Vegan Broccoli Bacon Bowl
Bacon flavored tempeh joins broccoli, veggies and sriracha tahini dressing, making a bowl that is bursting with flavor.
Ingredients
- 2 cups broccoli, cooked and diced
- 1/4 cup pepitas
- 1 yellow bell pepper, diced
- 1/2 red onion, diced
Bacon Tempeh
- 5 oz tempeh
- 1 tbsp tamari
- 1 tbsp pure maple syrup
- 1 tsp hot sauce
- 1/2 tsp cumin
Sriracha Tahini Dressing
- 1/2 cup tahini
- 3 tbsp warm water
- 1 lemon, juiced
- 2 tbsp sriracha
- 1 tbsp pure maple syrup
Instructions
To make bacon tempeh
- Create a quick marinade by combining your soy sauce, maple syrup, hot sauce and cumin in a glass bowl or tupperware. Soak the tempeh slices on each side for one minute until the sauce is soaked up.
- Add the tempeh to an oiled or non-stick pan, and cook over medium heat for approximately 5 minutes on each side until crispy.
Assemble the bowl
- Combine dressing ingredients in a jar and whisk until smooth. Add more water as needed to thin to a desired consistency.
- Assemble the rest of the ingredients in a bowl. Pour dressing over top, toss and enjoy.
