Vegan BLT Salad
This light, delicious vegan BLT salad will satisfy that bacon craving with a crunch of sweet and spicy tempeh bacon. Add in fresh veggies and a creamy, cheesy ranch sauce and you have meal you'll want to make all summer long!

Ingredients
Crumbled Vegan Bacon
- 125 g tempeh, crumbled
- 1/2 tbsp onion powder
- 1/2 tsp garlic powder
- 1/2 tbsp smoked paprika
- 1/2 tbsp liqiud smoke
- pinch black pepper
- 1 tbsp maple syrup
- 1/2 tbsp tamari
Dressing
- .5 scoop unflavored protein powder
- 1 tbsp nutritional yeast
- 1/3 cup soy milk
- 1 tbsp italian seasoning
- 1/2 tsp garlic powder
- 1/2 tsp salt, (or more to taste)
- 1 tsp tamari
Salad
- 2 cups romain lettuce
- 10 grape tomatoes
- 1 tbsp vegan feta cheese
Instructions
Vegan Bacon Crumbles
- Heat a small amount of water or oil over medium heat.
- Add tempeh crumbles and cook until slightly golden, adding more water as needed to prevent sticking.
- Add the rest of bacon ingredients and cook a few more minutes until well combined and starting to crisp. Be careful not to burn.
Dressing
- Place all dressing ingredients in a food processor or blender and blend well to combine. You can add more milk to desired consistency.
Assembly
- Shred lettuce leaves into a large bowl.
- Dice tomatoes and add to lettuce.
- Add warm bacon crumbles to the salad.
- Top with feta cheese and dressing and stir to combine.
