Tropical Overnight Oats
This easy breakfast almost makes itself! The sweet fruit adds a perfect touch to the delicious oats and chia that will keep you full of energy.

Ingredients
- 2.5 cups mango, frozen, cut into ½-inch cubes
- 2.5 medium bananas, sliced
- 1 1/3 cups gluten-free rolled oats
- 5 tbsp unsweetened shredded coconut
- 5 tsp chia seeds
- 3/4 tsp vanilla extract
- 1/4 tsp sea salt
- 5 cups unsweetened almond milk, or plant milk of choice
Instructions
- Divide the mango, bananas, oats, coconut, chia seeds, vanilla, and salt among pint-size mason jars (one jar for each serving). Mix gently.
- Add the almond milk and secure a lid on each jar.
- Refrigerate overnight.
Notes
STORAGE: Enjoy the following morning or store in the refrigerator up to 4 days. Do not freeze. You can eat this hot or cold.
VARIATION TIP: If you are out of shredded coconut or just want something different, swap in an equal amount of sliced almonds or almond meal. You can also use unsweetened macadamia nut milk, cashew milk or oat milk instead of almond milk.
To increase protien, add a scoop of plant based vanilla protein powder.
