Sweet Potato Toast with Ginger-Sesame Bean Dip

Ingredients
- 1 sweet potato
- 1/2 tbsp olive oil
- salt and pepper to taste
- 1/4 cup white beans, drained and rinsed
- 1/4 inch ginger, peeled
- 1/4 tsp sesame oil
- 1/8 cup water, filtered
- 1/2 scallion, thinly sliced
- 1/4 tsp paprika
- 1/4 tsp red pepper flakes, optional
Instructions
- Preheat the oven to 400°F. Line a baking sheet with parchment paper.
- In a large bowl, toss the sweet potatoes with the olive oil and season with salt. Arrange the slices in a single layer on the baking sheet and roast for about 30 minutes, turning once after 15 minutes, until the sweet potatoes are tender and start to caramelize.
- Meanwhile, put the beans, ginger, and sesame oil in a food processor or blender. Process until smooth, adding just enough water to blend. Add the scallions and pulse just enough to combine.
- To serve, spread the dip on top of the sweet potatoes and sprinkle with paprika and/or red pepper flakes, if desired.
