Sweet Potato Greens Salad
The combination of crisp leafy greens and warm sweet potato with crunchy vegetables and a bright sweet lemon dressing makes this a salad that’s easy to enjoy. Serve it up for lunch, dinner, or even breakfast!

Ingredients
- 3 cups sweet potato, any variety, diced
- 1 cup romaine lettuce, chopped
- 1 cup arugula
- 1 cup baby spinach
- 1 cup cucumber, diced
- 1/3 cup red onion, diced
- 2 stalks celery, diced
Dressing
- 1/4 cup lemon juice
- 2 tbsp pure maple syrup
- 1/4 tsp thyme
- 1/2 tsp paprika
- 1/4 tsp mustard powder
- salt and pepper to taste
Instructions
- Place the diced sweet potatoes in a steamer or colander set over a pan of boiling water. Cover with a lid and steam for 8 minutes, until tender and cooked through but still holding their shape. Set aside to cool for 2-3 minutes.
- Arrange the romaine, arugula, and spinach on a large serving platter or salad bowl and add the sweet potatoes, cucumber, red onion and celery.
- Make the dressing by whisking together the lemon juice, maple syrup, thyme, paprika, and mustard powder. Add black pepper if you wish.
- Pour the dressing over the salad and toss gently to coat. Serve immediately.
