Savory Sausage Crumble
Use this delicious "sausage" crumble to replace ground beef or sausage in your favorite savory dishes.

Ingredients
- 1/3 head cauliflower, broken into florets
- 3 oz mushrooms, cremini
- 1 carrots, peeled and diced
- 1/2 yellow onion, sliced
- 2 cloves garlic, minced
- 2 tbsp sun dried tomatos
- 1/3 cup walnuts
- 1 tsp italian seasoning
- 1 tsp fennel seeds, crushed
- 1/2 tsp red pepper flakes, optional
- 1/4 tsp garlic powder
- 1/4 tsp paprika
- 1 tbsp maple syrup, (for sweet sausage option)
- salt and pepper to taste
Instructions
- Preheat the oven to 400F
- Add walnuts and sun dried tomatoes to food processor and process, but not too much. It should be thick, not a smooth puree. Add cauliflower, mushrooms, carrots, onions and garlic and pulse.
- Add spices to vegetables and stir gently, so as not to puree the mixture.
- Spread mixture loosely on parchment paper and bake for 25 minutes, stopping halfway to stir the mixture.

You can substitute pepitas for walnuts to make this recipe nut free
