Salmon and White Bean Salad
The smooth beans, crunchy celery and onion, and firm salmon provide a mouthful of flavorful texture. This salad is great to make in advance for a picnic or meal prep. It can be eaten alone or on a bed of your favorite greens.
Ingredients
- 15oz cannellini beans, drained and rinsed
- 1/2 cup celery, finely chopped
- 1/3 cup red onion, diced
- 1/2 cup black olives, drained and sliced
- 7.5 oz salmon, wild caught, canned and drained
- 1/4 tsp Italian seasoning
- Salt and pepper to taste
- 3 cups romain lettuce
Lemon Herb Dressing
- 1/2 cup olive oil
- 1/2 tbsp lemon juice, freshly squeezed
- 1/2 tbsp red wine vinegar
- 1/2 tsp sea salt
- 1/4 tsp Italian seasoning
- 1/8 tsp ground black pepper
Instructions
- To make the dressing, put the olive oil, lemon juice, vinegar, salt, Italian seasoning, and pepper in a half-pint jar and shake vigorously to blend.
- After rinsing the beans, let them rest on paper towels to absorb any moisture while you prep the other ingredients.
- Put the celery, onion, olives, and drained beans in a large bowl. Flake the drained salmon with a fork and add it to the bowl. Add the Italian seasoning, salt, and pepper. Toss to combine. Drizzle with the vinaigrette and toss again.
- Serve over a bed of lettuce.
Notes
DRESSING STORAGE: Refrigerate in the jar up to 4 weeks or transfer to 2- to 3-ounce containers for individual servings.
DRESSING VARIATION TIP: Add 2 tablespoons of Dijon mustard or 2 teaspoons of dry mustard powder to add a little zing.
STORAGE: Pack the chopped lettuce separately in containers or resealable sandwich or quart-size bags. Divide the salmon-bean mixture among 4-cup containers. Store in the refrigerator up to 4 days.
MAKE IT 80%: Omit the salmon, and double the amount of beans or add ½ cup cooked quinoa per serving.
*SHORTCUT: Use store-bought Italian dressing or vinaigrette.
