Roasted Zucchini Boats Stuffed with Black-eyed Peas

Ingredients
- For the Zucchini Boats:
- 2 medium-sized zucchinis
- 1 tablespoons olive oil
- Salt and pepper to taste
- For the Stuffing:
- 7.5 ounces black-eyed peas, drained and rinsed
- 2 cloves garlic, minced
- 1/2 teaspoon dried thyme
- 1/2 teaspoon dried oregano
- 1/2 teaspoon paprika
- Salt and pepper to taste
- 1/4 cup grated Parmesan cheese (can use vegan parmeson or nutritional yeast to keep it dairy free).
Instructions
- Preheat your oven to 375°F (190°C).
- Wash the zucchinis and cut them in half lengthwise. Use a spoon to scoop out the seeds and create "boats" with the zucchini halves. Leave about a 1/4-inch border around the edges.
- Place the zucchini boats on a baking sheet lined with parchment paper.
- Brush the zucchini boats with olive oil and season them with salt and pepper.
- Roast the zucchini boats in the preheated oven for about 15 minutes or until they start to soften but are still firm.
- While the zucchini is roasting, prepare the stuffing. In a medium-sized bowl, combine the drained black-eyed peas, minced garlic, dried thyme, dried oregano, paprika, salt, and pepper. Mix everything well.
- Once the zucchini boats are done roasting, remove them from the oven.
- Fill each zucchini boat with the black-eyed pea mixture, pressing it down gently to pack the filling.
- If desired, sprinkle grated Parmesan cheese over the stuffed zucchini boats.
- Return the zucchini boats to the oven and bake for an additional 10-15 minutes, or until the zucchini is tender, and the filling is heated through.
