Roasted Potato Kale Salad
This is the perfect salad for cooler weather! Warm roasted potatoes, onions and mushrooms combine with fresh kale and a mustard dressing for a perfect comfort food salad.

Ingredients
- 4 baby yellow potatoes
- 1/2 yellow onion, sliced
- 1 cup mushrooms, sliced
- 2 cups baby kale
- 1 tablespoon Worcestershire Sauce
- 1/2 teaspoon garlic powder
- 1/2 tsp Salt, or Mrs Dash seasoning
Dressing
- 1/2 tbsp lemon juice
- 1 tbsp water
- 1/4 cup stone ground mustard
Instructions
- Preheat the oven to 400 degrees
- Spread the potatoes, mushrooms and onions on your baking sheet. Drizzle the broth and Worcestershire sauce evenly over and season with salt or Mrs Dash and garlic powder. Mix well to combine.
- Roast the vegetables for 20-25 minutes, flipping halfway through.
- While the vegetables are roasting, whisk together the dressing ingredients. When the vegetables are done roasting, toss them hot with the shredded kale and top with dressing. Plate with a sprinkle of fresh chives, if desired.
Notes
To save time, purchase steam fresh vegetables from your groceries frozen vegetables section.
To make this meal non vegan, add shredded chicken or steamed shrimp
