Roasted Cauliflower Tacos With Avocado Cream
These delicious tacos feature a surprising and delicious ingredient: roasted cauliflower. Dress up these tacos with a dollop or two of avocado cream, cabbage slaw and black beans and you've got yourself a delicious and nutritious mexican flavored meal!

Ingredients
- 1/2 head cauliflower, Can also use one bag of frozen florets
- 1 tsp chili powder
- 1 tsp cumin
- 1 tsp salt, or to taste
- 1 tbsp lime juice
- 3 tbsp low sodium vegetable broth
- 4 corn tortillas, small
- 1 cup cabbage, shredded, or use cabbage slaw mix
- 1 avocado
- 1 cup non dairy plain yogurt
- 1/3 cup cilantro, fresh
- 1 cup blackbeans, cooked or canned
- hot sauce, optional
Instructions
Directions
- Preheat the oven to 400 degrees Fahrenheit.
- In a medium bowl, whisk together chili powder, cumin, salt, lime juice and vegetable broth.
- Add cauliflower florets and coat well.
- Place the cauliflower in a single layer on a baking sheet and roast for 30 minutes or until tender and slightly browned.
- While the cauliflower is roasting, warm the black beans over medium-low heat.
To make the Crema:
- Blend avocado, non dairy yogurt, lime juice, cilantro and pepper until smooth and creamy.
Assembly:
- Plate tortillas and add shredded cabbage. Top with roasted cauliflower and black beans. Drizzle with avocado crema and hot sauce (optional). Top with fresh cilantro.
