Ingredients
- For the Salad:
- 1 cup quinoa, rinsed and cooked according to package instructions
- 2 oranges, peeled and segmented
- 2 limes, peeled and segmented
- 1 small fennel bulb, thinly sliced
- 1 cup mixed sprouts (e.g., alfalfa, broccoli, or radish sprouts)
- 1/4 cup fresh cilantro leaves, chopped (optional)
- Salt and black pepper to taste
- For the Citrus Vinaigrette:
- Juice of 1 lime
- Juice of 1 orange
- 2 tablespoons extra-virgin olive oil
- 1 tablespoon honey or maple syrup (optional for sweetness)
- 1 clove garlic, minced
- Salt and black pepper to taste
Instructions
- Cook the quinoa according to the package instructions and let it cool to room temperature.
- In a large salad bowl, combine the cooked and cooled quinoa, orange segments, lime segments, thinly sliced fennel, and mixed sprouts.
- If desired, add chopped fresh cilantro leaves for an extra burst of flavor.
- In a small bowl, prepare the Citrus Vinaigrette. Whisk together the lime juice, orange juice, extra-virgin olive oil, minced garlic, and, if you prefer a slightly sweet dressing, add honey or maple syrup. Season with salt and black pepper to taste. Adjust the sweetness and acidity to your liking.
- Drizzle the Citrus Vinaigrette over the salad ingredients in the large bowl.
- Gently toss the salad to ensure the dressing coats all the components evenly.
- Taste the salad and adjust the seasoning with more salt and black pepper if needed.
Notes
To save time, make the quinoa ahead of time or used pre-cooked from the grocery store.
Don't have oranges? No problem replace with any other citurs fruit, such as grapefruit.
Add one avocado for additional healthy fats.
