Potato Pizza Boat

Ingredients
- 1 russet potato, baked or microwaved
- 1/2 cup marinara, homemade or store bought
- 2 tbsp feta cheese, vegan, crumbled
- 4 grape tomatoes
- 1 bunch basil, roughly torn
- pinch red pepper flakes
- salt and pepper to taste
Instructions
- When the potato is cool enough to handle, cut the potato in half lengthwise and scoop out the top of each potato half, creating a boat. Place a couple of tablespoons of tomato sauce in each and add toppings of your choice.
- Place them back in the oven and roast for 15 to 20 minutes, until the toppings are cooked through. Serve immediately.
