Pasta & Vegetable Soup
This easy to make soup is so versatile - substitute any veggies or any protein in your pantry and make it unique! Freezes excellent, so feel free to make extra and store it in the freezer for leftovers.

Ingredients
- 5 ribs celery, diced
- 2 carrots, diced
- 1/2 yellow onion, diced
- 3 cloves garlic, minced
- 8 cups low sodium vegetable broth
- 1 russet potato, peeled and diced
- 1 cup broccoli, frozen or fresh
- 1.5 cup lentils, rinsed
- 2 cups whole grain pasta, uncooked
- salt and pepper to taste
Instructions
- In a large pot, saute celery, carrots, onion and garlic over medium heat, until onions become translucent (about 5 minutes)
- Add vegetable broth, potatoes, broccoli, and lentils. Bring to a boil.
- Cover and reduce to a simmer. let cook for 20 minutes.
- Add pasta and cook for an additional 15-20 minutes. When noodles are tender, serve and enjoy! Optional Top with green onions, nutritional yeast, or hot sauce.
