Mediterranean Flatbread Pizza
This Vegan Flatbread Mediterranean Pizza is a delicious and plant-based twist on a classic Mediterranean favorite. It offers a burst of flavors and vibrant colors inspired by the Mediterranean cuisine.

Ingredients
- Crust:
- 1 cup chickpea flour
- 1 cup water
- 1.5 tablespoon extra virgin olive oil
- 1/4 tablespoon salt
- Sauce:
- 1 can cannelini beans
- 2 tablespoons water
- 1 teaspoon cumin
- 1/4 teaspoon salt
- 1 clove minced garlic
- 1 tablespoon lemon juice
- dash of hot sauce (optional)
- Toppings:
- 1/2 onion, sliced
- 6 grape tomatoes, sliced in quarters
- 1/2 bell pepper, diced
- Plant based feta cheese
- Fresh basil
- 2 tablespoon Balsamic Vinegar
- sprinkle of crushed red pepper (optional)
Instructions
- Preheat the oven to 450 degrees,
- In a small bowl, combine the chickpea flour, water, olive oil and salt. Let sit while you chop the vegetables.
- Slice and dice your veggie toppings. Place tinfoil or parchment paper over a cookie sheet. Spread out the veggies and drizzle with olive oil and salt.
- Grease a round or square pan and pour in the dough for the crust.
- Place both the crust and veggies in the oven and cook for 20-25 minutes, until the crust is golden brown.
- While the crust and veggies are cooking, place all ingredients for the sauce in a food processor or high speed blender. Add more water one tablespoon at a time if the sauce is too thick.
- Once the crust is ready, spread the sauce on top of the dough and top with the veggies, feta and drizzle with balsamic vinegar. Add fresh basil, crushed red pepper, or any other toppings you choose.
Notes
You can use any white bean for the sauce or substitue with store bought hummus to save time.
