Herbed Fish with Collard Greens and Mushrooms

Ingredients
- 8 oz Cod , or Halibut
- 2 tsp Italian Seasoning
- salt and pepper to taste
- 3 tbsp olive oil
- 1 shallot, sliced
- 1/5 cups mushrooms, sliced
- 1 clove garlic, minced
- 1/2 bunch collard greens, stemmed and chopped
- 1 tomato, diced
- 1.5 tsp lemon juice
Instructions
- Preheat the oven to 400°F. Line a baking sheet with parchment paper.
- Pat the fish dry. Sprinkle it with 1 teaspoon of the Italian seasoning, and season with salt and pepper. Heat 2 tablespoons of olive oil in a medium skillet over medium-high heat. Add the fish and sear for about 2 minutes on each side.
- Transfer the fillets to the baking sheet. Bake for 8 to 10 minutes, or until the fish reaches 145°F and flakes easily with a fork.
- While the fish is in the oven, in the same skillet, over medium-high heat, heat the remaining 1 tablespoon of olive oil. Add the shallot and sauté for 3 to 4 minutes or until translucent. Add the mushrooms and garlic and sauté until the mushrooms turn brown and lose their liquid, 4 to 6 minutes. Add the collard greens, tomato, and the remaining teaspoon of the Italian seasoning. Cook for 5 to 7 minutes, stirring occasionally, until the kale is wilted. Stir in the lemon juice and season with salt and pepper.
Notes
STORAGE: Transfer the vegetables to a serving dish or portion between 3-cup rectangular glass storage containers. Top the vegetables with the fish fillets. Refrigerate up to 3 days or freeze up to 3 months.
