Healthy Hearty Bean Chili
You won't miss the meat in this healthy, heart bean chili. Chopped veggies and different beans combined with delicious spices make this dish delish!

Ingredients
- 1 white onion, chopped
- 4 cloves garlic, minced
- 1 Green Bell Pepper, chopped
- 1 carrots, Medium, chopped
- 20 oz diced tomatoes
- 5 tbsp tomato paste
- 2 cups vegetable broth, (or water)
- 1 cup black beans
- 1 cup kidney beans
- 1 cup pinto beans
- 1 cup white beans
- 2 tsp maple syrup, pure
- 1 tsp ground cumin
- 1 tsp onion powder
- 1 tsp garlic powder
- 3/4 tsp salt
- 1/2 tsp black pepper
- 1/4 tsp smoked paprika
- 1/4 tsp cayenne pepper
- 1 jalapeno, seeded and diced
- 2 tsp grapeseed oil
- 1/4 avocado, (optional)
- 1 cup tortilla chips, crushed
Instructions
- In a large pot, add oil ( or use a few tablespoons of vegetable broth to make this oil free). Saute the onion and pepper for about 5 minutes. Add the minced garlic and saute another few minutes, stirring occasionally.
- Mix in tomatoes and saute for another 5 minutes.
- Add all remaining ingredients, increase the heat and simmer for at least 30 minutes, stirring occasionally. Add more water or broth if the consistency gets too thick.
- Garnish with avocado slices and serve
Notes
If you don't have time to make this chili, a store bought vegetarian chili will work in place. I recommend Amy's Organic Vegetarian Chili.
