Ingredients
- 2 medium-sized zucchinis, sliced lengthwise
- 2 medium-sized yellow squash, sliced lengthwise
- 2 tablespoons olive oil
- Salt and black pepper to taste
- 1 teaspoon dried Italian seasoning (optional)
- 4 cups salad greens
- 1 tablespoon Balsamic Vinegar
- 2 tablespoon Extra Virgin Olive Oil
- 1/4 cup pepitas
Instructions
- Preheat your grill or grill pan to medium-high heat.
- In a bowl, toss the sliced zucchinis and yellow squash with olive oil. Season with salt, black pepper, and dried Italian seasoning if desired.
- Grill the zucchini and squash slices for about 2-3 minutes per side or until they have grill marks and are tender but still slightly firm. Remove them from the grill and set aside.
- Mix the salad greens with balsamic vinegar and oil, and then top with zucchini and squash and sprinkle with pepitas.
