Golden Milk Quinoa with Maple-Roasted Vegetables

Ingredients
- 1 cup broccoli, chopped
- 1/2 red bell pepper, seeded and chopped
- 1/4 red onion, chopped
- 1/4 sweet potato, peeled and chopped
- 1 tsp maple syrup
- pinch sea salt
- 1/2 cup quinoa, uncooked
- 1 cup full fat coconut milk, canned
- 1 tsp turmeric
- pinch black pepper
Instructions
- Preheat the oven to 375°F.
- In a large baking dish or Dutch oven, combine the broccoli, bell pepper, onion, yam, maple syrup, and salt. Bake for 20 minutes, uncovered, or until the veggies are slightly roasted.
- Remove the dish from the oven and turn the heat down to 325°F.
- Add the quinoa, coconut milk, turmeric, and pepper. Mix well. Cover and bake for 30 minutes, or until the quinoa is cooked.
