Ingredients
- 1.5 tsp ginger , finely grated
- 2 cloves garlic, minced and divided
- 1.5 tbsp coconut aminos
- 1 tbsp pure maple syrup
- Red pepper flakes
- 8 oz salmon fillets, skin on
- 1 tbsp olive oil
- 1.5 tsp sesame oil
- 4 cups green cabbage, chopped
- 1/2 cup water
- salt and pepper to taste
Instructions
- Combine the ginger, 1 garlic clove, coconut aminos, maple syrup, and red pepper flakes in a gallon-size resealable bag. Add the salmon. Marinate for 30 minutes or overnight in the refrigerator.
- Heat the olive oil in a large skillet over medium-high heat. Add the salmon (discard the marinade). Cook the salmon, skin-side up, for about 4 minutes. Flip the fillets and reduce the heat to medium. Cook for 4 to 5 minutes until the skin is crisp and the fish flakes with a fork. Set the salmon aside.
- In the same skillet, heat the sesame oil over medium-high heat. Add the remaining 1 clove of garlic and cook for about 1 minute. Add the cabbage and cook, stirring constantly, for 1 to 2 minutes. Add the water and cook, stirring occasionally, 5 to 10 minutes, until the cabbage is tender and the liquid evaporates. Season with salt and pepper.
Notes
STORAGE: Portion the cabbage between 2 serving dishes or 3-cup rectangular glass storage containers and top each with a salmon fillet. Refrigerate up to 3 days or freeze up to 3 months. Follow the standard reheating instructions here.
VARIATION: Replace the salmon with the same weight of shucked, fresh or frozen, Eastern oysters and cook 2 to 3 minutes.
