Diana's Cowboy Caviar
This dip can be added to salads, served as an appetizer, or plated as a main course!

Ingredients
- 15 oz corn, canned, drained and rinsed
- 8 oz black eyed peas, canned, drained and rinsed
- 8 oz black beans, canned, drained and rinsed
- 2 jalapenos, seeded and minced
- 1 tomato, diced
- 3/4 cup red bell pepper, diced
- 1/2 cup red onion, diced
- 1 tbsp cilantro
- 2 tsp lime juice
Dressingn (or use store bought Italian dressing)
- 1/4 cup olive oil
- 1 tbsp red wine vinegar
- 1/2 tbsp nutritional yeast
- 1/4 tbsp maple syrup
- 1/4 tbsp dijon mustard
- 1/4 tsp basil, dried
- 1/4 tsp oregano, dried
- 1/4 tsp salt
- 1/4 tsp thyme, dried
- 1/4 tsp crushed red pepper, (optional)
- 1/8 tsp garlic powder
Instructions
- Combine the corn, beans, jalapeno, tomato, bell pepper, onion and dressing in a large mixing bowl. Taste and add salt and pepper if needed. Cover the bowl with plastic wrap and refrigerate for at least one hour.
- Just before serving, add cilantro and lime juice and toss again.
