Deconstructed Taco Bowl
Take your favorite base and mix it all up with your favorite taco toppings! This meal can be whatever you want it to be, and can change each time you make it.
Ingredients
Chorizo "Sausage"
- 1/2 cup walnuts, chopped
- 1/4 15oz can chickpeas, drained and rinsed
- 1/4 tbsp extra virgin olive oil
- splash apple cider vinegar
- 1 tbsp taco seasoning
Optional Toppings
- 1/4 avocado, smashed
- 2 tbsp red onion, chopped
- 2 tbsp black olives, sliced
- 1 tbsp salsa
- 1/8 cup shredded cheese, vegan
- 2 tbsp cilantro, fresh
- 1 cup romain lettuce
Instructions
- Combine the walnuts, chickpeas, oil, vinegar adn taco seasoning in a food processer and pulise until walnuts are the size of a grain of rice.
- Transfer walnut chorizo to a skillet and cook on medium low heat until warmed through.
- Add lettuce and additional toppings to a bowl. Top with warm chorizo and serve.
