Creamy Mushroom Stroganoff
You would never guess that this Easy Vegan Stroganoff is made with completely plant-based ingredients and is totally dairy-free! It takes less than 30 minutes to prepare from start to finish and tastes great served over your favorite rice or pasta.

Ingredients
- 1 tbsp plant based butter
- 1/2 small yellow onion
- 8 oz mushrooms, baby bella or your preference, sliced
- 2 cloves garlic, minced
- 4 oz dry white wine, (optional)
- 1/2 cup vegetable broth, (add more if needed to thin sauce)
- 1 tbsp tamari, or low sodium soy sauce
- 1/2 tsp dijon mustard
- 3/4 can coconut milk, or 3/4 cup plant based milk
- 2 tbsp all purpose flour, or cornstarch
- 1/2 tsp sage
- 1 tsp onion powder
- 1/2 tbsp thyme
- 1/2 tsp garlic powder
- 1/2 tsp paprika
- 1 tbsp nutritional yeast
- 4 oz pasta
- salt & pepper to taste
Instructions
- Cook pasta or rice according to directions on package.
- Heat butter in a large skillet, add onion and sauté for about 5 minutes. Add minced garlic and cook for another minute.
- Add mushrooms and cook for another 5 minutes.
- Pour in white wine (optional), broth, tamari, dijon mustard and spices (including nutritional yeast).
- Add flour or cornstarch to the plant based milk and stir to dissolve Pour the milk into the pan and cook on low-medium heat for about 10 minutes or until the sauce thickens.
- Serve over rice or pasta and garnish with fresh thyme, parsley, or additional nutritional yeast.
