Cleansing Mung Bean Spinach Soup

Ingredients
- 2 cups mung beans (use sprouted if you can)
- 2 cups spinach, fresh
- 2 Tbsp coconut oil
- 3 cups water
- 2 cups vegetable stock
- 2 tsp tourmeric
- 1/2 white onion, diced
- 3 cloves of garlic, minced
- Himalayan salt and pepper to season to your taste
- 1/4 tsp nutritional yeast
- Dried basil to season
- Pinch of cayenne pepper
- Cherry tomato and cilantro to top (optional)
Instructions
- In a large pan, heat olive, then sauté the onion and garlic until translucent.
- Add the cups of water, mung beans and bouillon cubes, and cook until the mung beans are tender.
- Bring to a boil and then add the spinach, nutritional yeast and the rest of the seasonings.
- Simmer for about 25 minutes.
- Optional: Pour some of the soup into a food processor or blender, puree and then mix back to the pot for a thicker soup.
- Serve with a sprig of cilantro and diced cherry tomato.
