Ingredients
Salad ingredients
- 3 cups romain lettuce
- 1 cup chickpeas, drained and rinsed
- 1/2 bell pepper, sliced
- 1/4 red onion, sliced
- 1/2 cup cherry tomatoes, sliced
- 1 cup cucumber, diced
- 1/2 cup kalamata olives, pitted
- 2 tbsp hummus
Homemade Vinaigrette
- 2 tbsp olive oil
- 2 tbsp red wine vinegar
- 2 tbsp lemon juice
- 2 tsp garlic, minced
- 2 tsp oregano, dried
- pinch sea salt
- pinch black pepper
Instructions
- Combine all salad ingredients into a large bowl. Drizzle with vinaigrette and mix well to toss.
