Chickpea Sausage, Peppers and Onions
A delicious, healthy alternative to your favorite combo of sausage, peppers and onions. Use it on top of spaghetti, rice, or just eat it on its own for a delicious meal.

Ingredients
- 1/2 medium white onion, thinly sliced
- 1/2 green bell pepper, thinly sliced
- 1/2 cup Chickpea Sausage
- 1 tbsp Extra Virgin Olive Oil
- 1/4 cup sugar free marinara (optional)
- 1 tbsp nutritional yeast (optional
- dash crushed red pepper
Instructions
- Heat Extra Virgin Olive Oil over medium heat
- Add sliced peppers, onions and chickpea sausage and cook over medium-high heat until vegetables are tender and sausage is starting to brown (about 10 minutes).
- Stir in marinara sauce and heat through, about 2 minutes.
- Serve over your favorite pasta, rice, or on it's own.
- Sprinkle with nutritional yeast and red pepper flakes
