Buffalo Chickpea Tacos
You can make these buffalo chickpea tacos as firey or mild as you please! This is a tasty quick and easy recipe that everyone will love.

Ingredients
- 1 15oz can chickpeas, drained and rinsed
- 1 tbsp tamari, (or low sodium soy sauce)
- 1 tsp garlic powder
- 1/2 tsp cumin
- 1/2 tsp paprika
- 1/2 tsp onion powder
- 2 tbsp hot sauce
- 6 corn tortillas, warmed
- 1/2 avocado
- 1/4 head caggabe, red or green, shredded
- 2 green onions, thinly sliced
- 1/4 cup cilantro
Sriracha Cashew Cheese Sauce
- 1 cup raw cashews
- 1/2 cup water
- 1 lemon, juiced
- 1 clove garlic
- 1 tbsp nutritional yeast
- 2 tsp sriracha sauce
Instructions
Sriracha Cheese Sauce
- Place all ingredients into a small blender (I used a magic bullet for this job). Blend until creamy, taste for flavor adding extra chili sauce if needed.
- Thin with water to desired consistency using one tablespoon at a time. If you find it’s too watery add a few cashews and blend again until smooth.
- Tip: Soak the cashews in warm water for 10 minutes for creamier texture. Drain and rinse before adding to the recipe.
Tacos
- In a small pan, combine the chickpeas, garlic + onion powder, cumin, paprika, tamari, and as much hot sauce to suit your taste. Warm chickpea mixture over medium heat until warmed through. Alternatively, warm the chickpeas in the microwave, using a microwave safe bowl, for 45 – 60 seconds.
- Warm the tortillas either over the stove or in the microwave
- Layer each tortilla with buffalo chickpeas, avocado, cabbage, green onions, cilantro, and drizzle of Sriracha Cheese Sauce.
- Makes 3 servings or 2 tacos each
