Breakfast Oatmeal Cookie
Cookies for breakfast? With this recipe, why not? Hearty oats mixed with sweet bananas and crunchy chocolate chips will have you wanting "breakfast" ALL day!
Ingredients
- 2 bananas, mashed
- 1.5 cups steel cut oats
- 1/2 tsp cinnamon
- 1/3 cup vegan chocolate chips
- 1/2 tsp baking powder
- 2 tbsp walnuts, chopped (optional)
Instructions
- Preheat the oven to 375°F and line a baking sheet with parchment paper.
- Place all the ingredients in a large bowl and mix until fully combined. Wet your hands and form into eight balls. Place at least 1 inch apart on the prepared pan. Flatten the balls with your hands or the back of a fork until they are approximately 1/2 inch thick.
- Bake for 12 minutes, or until a toothpick inserted into a cookie comes out clean.
