Ingredients
- 1/2 cup brown rice, Use the microwavable to save tons of time
- 1/2 cup black beans, drained and rinsed
- 1/2 avocado
- 1/2 jalapeño, fresh, seeded and diced
- 2 tbsp salsa, low sodium if available
- 1 sprig cilantro, fresh
- 1/4 cup diced tomatoes, fresh or canned
- 1 tsp ground cumin
- 1/2 tbsp ground oregano
Instructions
- Microwave the package of brown rice and scoop 1/2 cup into a bowl
- Warm up the drained and rinsed black beans in the microwave, about 45 seconds, and add to rice
- Mix cumin and oregano into rice and beans mixture
- Add additional toppings and enjoy!
Notes
Additional toppings could include black olives, hot sauce, crushed tortilla chips, sautéed veggies, or non dairy yogurt.
If you have additional time, cook the brown rice and black beans on a stove and allow to simmer with the spices for enhanced flavors.
Store leftovers in the fridge up to one week.
For a non-vegan option, add ground turkey.
