Bean and Vegetable Stew with Steamed Turnips
This stew is rich in protein from mung beans and packed with a variety of vegetables, making it both satisfying and healthy. The steamed turnips provide a delightful contrast in texture. Enjoy!
Ingredients
- For the Stew:
- 1 cup mung beans, rinsed and soaked overnight
- 2 tablespoons vegetable oil
- 1 onion, finely chopped
- 2 cloves garlic, minced
- 1-inch piece of fresh ginger, grated
- 2 carrots, diced
- 2 celery stalks, diced
- 1 bell pepper, diced (any color)
- 1 zucchini, diced
- 1 can (14 ounces) diced tomatoes
- 4 cups vegetable broth
- 1 teaspoon ground cumin
- 1 teaspoon ground coriander
- 1/2 teaspoon ground turmeric
- Salt and pepper to taste
- Fresh cilantro leaves for garnish (optional)
- For the Steamed Turnips:
- 4 turnips, peeled and diced
- 1 tablespoon olive oil
- Salt and pepper to taste
Instructions
- Cook the mung beans according to package.
- In a large soup pot or Dutch oven, heat the vegetable oil over medium heat.
- Add the chopped onion and sauté for about 3-4 minutes until it becomes translucent.
- Stir in the minced garlic and grated ginger and cook for an additional minute until fragrant.
- Add the diced carrots, celery, bell pepper, and zucchini to the pot. Sauté for about 5 minutes, or until the vegetables start to soften.
- Sprinkle the ground cumin, ground coriander, ground turmeric, salt, and pepper over the vegetables. Stir well to coat the vegetables with the spices.
- Pour in the diced tomatoes (with their juice) and vegetable broth. Stir to combine all the ingredients.
- Add the mung beans to the pot.
- Bring the mixture to a boil, then reduce the heat to low, cover the pot, and let it simmer for about 30-40 minutes, or until the mung beans are tender and the stew has thickened.
For the Steamed Turnips:
- While the stew is simmering, prepare the steamed turnips. Place the diced turnips in a steamer basket over boiling water.
- Steam the turnips for about 10-15 minutes or until they are tender when pierced with a fork.
- Drizzle olive oil over the steamed turnips and season with salt and pepper.
To Serve:
- Ladle the Mung Bean and Vegetable Stew into bowls.
- Top each serving with steamed turnips and garnish with fresh cilantro leaves if desired.
Notes
Option: Strip the steamed turnips into the stew instead of adding on top, for a creamier stew.
