Bacon-Shroom Toast
This perfect combination of creamy butter bean hummus with mushroom "bacon" is the perfect topping for your morning toast (or afternoon snack!)

Ingredients
- 2 pieces gluten free bread
- 1 serving bacon shroom bits
- 2 tbsp Creamy Butter Bean Hummus
- 8 cherry tomatoes
- 1/4 cup baby kale, roughly chopped
- 1 tsp extra virgin olive oil
- salt and pepper to taste
Instructions
- Place the tomatoes and kale on the other lined baking sheet, drizzle with olive oil, and season to taste.
- Place the kale and tomatoes in the oven and bake for 5 minutes, until the kale is just starting to crisp and the tomatoes are softening a little. The kale cooks very quickly, so keep an eye on it.
- Toast the gluten free bread, spread with the butter bean hummus, and top with the bacon-shrooms, kale, and tomatoes.
