Bacon Shroom Bits
These smoky crunchy mushroom pieces prove to bacon lovers that plants can be just as flavorful!

Ingredients
- 1 tbsp red miso paste
- 1 tbsp low sodium soy sauce, or tamari
- 1 tbsp worcestershire sauce
- 1 medjool date, minced and soaked in water to make a paste
- 2 portobello mushrooms, roughly diced
Instructions
- Preheat the oven to 425°F (220°C) and line a baking sheet with parchment paper
- Mix the miso paste, soy sauce, Worcestershire sauce, and date paste in a medium bowl.
- Add the mushrooms and coat them well with the marinade.
- Spread the mushrooms out on the baking sheet and drizzle with any leftover marinade, then roast for 20 minutes, stirring after 10 minutes.
