Applesauce Pie
Snuggle up with a warm bowl of this delicious applesauce pie with ginger and coconut oil to fill up on anti-inflammatory and anti-obesity goodness. Apples are a top pick when you are faced with any illness or inflamation, and ginger aids digestion and keeps you warm. Coconut adds to soothing the belly and making this dish extra smooth.

Ingredients
- 1 cup apples, diced
- 1 tsp coconut oil, refined extra virgin
- 1 tsp cinnamon
- 1/4 tsp ginger, dried
- 1 tbsp date, diced
- 1 tbsp pecans, chopped
Instructions
- Peel, core, and thinly slice apples. Combine apples in a saucepan with 1/3c water and simmer until the apples are tender, stirring frequently. Add in raw sugar. If you are using store bought applesauce skip to step 2.
- Mix and bring coconut oil, ginger, and applesauce to a simmer, stirring occasionally. Serve warm.

You can use store bought applesauce to save time and just skip to step two 🙂
